2 cups flour
1/2 t salt
1 1/2 t baking soda
1t baking powder
3 eggs, seperated
1t vanilla
2 cups buttermilk
3T butter, melted
Into a large bowl sift flour, salt, baking soda and baking powder
Beat egg whites til stiff and set aside. Beat yolks with vanilla, stir in buttermilk.
Add to flour and mix well, there should be no lumps. Fold in egg whites until well blended.
Add melted butter and mix.
Heat aebleskiver pan. Spoon 1/2 teaspoon oil into each section and fill 2/3 full with batter.
Cook over medium heat until bubbles appear.
Turn 1/4 turn with a fork or skewer and cook the next side until lightly
browned. Continue until you have turned the Aebleskivers 3 times to form a ball.
Serve with maple syrup and jam.
Makes 4 to 6 servings.
This dish, which I learned from the mother of a friend, has become our traditional Christmas Breakfast.
To half this recipe use 2 eggs and half of all the other ingredients.
