Asian Shrimp Dip


1/2 lb fresh Oregon shrimp meat
2 T chopped cilantro
2 T chopped chives
1 t chili sesame oil
2 T ponzu vinegar or 1 T rice vinegar and 1 T lemon juice
1 T soy sauce

Mix all ingredients together. Serve on rye bread squares.

Makes 4 to 6 servings.

Notes:

Do not try this dish with previously frozen shrimp meat. It just won't be the same!
