Danish Cucumber Salad (Pressgurka)


1 cucumber
1/3 cup cider vinegar
5 T water
5 T sugar
1/2 t salt
few grains white pepper

Score the cucumber lengthwise with a fork. Cut into thin slices and put in a shallow bowl. Mix remaining ingredients and pour over the cucumbers slices. Toss lightly to coat evenly. Cover and refrigerate for several hours. Garnish with chopped parsley.

Makes 4 to 6 servings.

Notes:

You can use an English cucumber for this instead. Use about half the cucumber.
