Cheese Stuffed Manicotti


8 pieces Manicotti, uncooked
1 container ricotta cheese (15 oz)
1 c shredded mozzarella cheese, divided
1/4 c grated Parmesan cheese, divided
1 egg
1 T chopped parsley
1/4 t salt
1/4 t ground black pepper
1/8 t ground nutmeg
Tomato Sauce with Meat

Heat oven to 350 degrees. Cook pasta according to package directions (6 - 8 minutes).

In a large bowl, stir together the ricotta cheese, 3/4 c mozzarella cheese, 1/8 c Parmesan cheese, egg, parsley and seasonings. Spoon some of the sauce into the bottom of a shallow baking pan.

Spoon cheese mixture into each pasta tube to fill. Place in baking pan snugly side-by-side.

Spoon tomato sauce over the filled tubes, sprinkle with remaining mozzarella and Parmesan cheeses. Cover with foil and bake for 35 min. Remove the foil and cook another 5 minutes or until hot and bubbly.

Makes 4 servings.

Notes:

Leave the meat out of the tomato sauce for this dish. I usually cook 3 manicotti at a time, fill them, then cook 3 more. They are easier to handle that way.
