Poblano Peppers Stuffed with Goat Cheese

2 Fresh Poblano Peppers
8 oz Goat Cheese
1 jalapeno pepper
1 T chopped cilantro
2 T green onion, sliced thin
1 t Mexican hot sauce
salt to taste

Cut Poblano pepper in half, stem, remove seeds and ribs.

Mix remaining ingredients. Divide filling in quarters and fill each pepper half. Place filling-side up on a baking sheet. Broil over medium heat for 10 minutes or until peppers start to blister. Remove, garnish with some chopped cilantro and green onion. Serve immediately.

Makes 4 servings.


This is a great side dish for grilled steak.
