Greek Potatoes


8 large potatoes, cut into wedges
4 garlic cloves, minced
1/2 cup olive oil
1 cup water
1 T oregano
1 - 1 1/2 lemons
salt & pepper to taste

Put all the ingredients, except the salt and pepper, in a baking dish. Season with salt and pepper. Toss the potatoes in the liquid. Bake in a 450 degree oven for 40 minutes.

Remove dish from oven, stir potatoes, add about 1/2 cup more water. Season with more salt, pepper and oregano. Bake for another 40 minutes or until the potatoes are well browned and water has evaporated.

Makes 6 to 8 servings.

Notes:

This is a great accompaniment to lamb. The potatoes are brown, crispy and lightly scented with lemon and garlic.
