Strawberry Shortcake with Anise Pizzelles


2 Anise-flavored Pizzelles
1/4 cup Heavy Whipping Cream
1 T sugar
Fresh Strawberries, hulled and sliced

Whip cream with sugar. Place a pizzelle on a plate. Spoon on some whipped cream. Scatter on some strawberries. Add a dollop of whipped cream on top of the berries.

Makes 2 servings.

Notes:

Make your own pizzelles or use ones purchased at the grocery store. One evening I had just 2 pizzelles that needed using up. Usually I make ice cream sandwiches with the pizzelles and top them with chocolate sauce. But I had some fresh strawberries and thought they would make a good, and low-calorie, base for strawberry shortcake. The anise flavor worked surprisingly well. My guess is that any berry would work well in this dish. Combine raspberries with almond-flavored pizzelles and blackberries with lemon-flavored ones.
