Italian Prune Plum Cake


1 cup flour
1 t baking powder
1/4 t salt
2 T plus 1 cup sugar
1 1/2 to 3 T plus 3 T butter
1 egg
1/2 t vanilla
1/4 c milk
3 - 4 cups sliced Italian prune plums
2 t cinnamon

Sift flour, baking powder, salt and 2 T sugar into a bowl. Cut in 1 1/2 to 3 tablespoons butter as if making a pie crust.

Beat egg in a measuring cup. Add vanilla and enough milk to make a 1/2 cup mixture.

Combine with the flour and butter to make a stiff dough.Pat the dough into a 9" square pan with a floured palm. Push plums onto dough in overlapping rows.Sprinkle with a mixture of 1 cup sugar and cinnamon. Melt 3 tablespoons butter and pour over fruit and sugar.

Bake in a 425 degree oven for about 25 minutes.

Makes 8 servings.

Notes:

A good way to use up prune plums. The plums are surprisingly un-pruney.
