Pork Chops in Onion Sauce


4 pork chops
1/2 t salt
1/4 t pepper
1 1/2 t flour
1 1/2 T vegetable oil
4 small or 2 medium onions, thinly sliced
1/2 cup beer
1/2 cup hot beef broth
1 t cornstarch

Season pork with salt and pepper, coat with flour.

Heat oil in a heavy frying pan.Add onions, cook for 5 minutes. Remove from pan and set aside. Add chops, fry each side for 3 minutes. Cover chops with the reserved onions. Add beer and broth. Cover and simmer for 15 minutes.Remove chops to preheated platter. Season sauce to taste.

Blend cornstarch with a small amount of cold water. Stir into sauce, cook until thick and bubbly. Pour over pork.

Makes 4 servings.
