1 (10-ounce) box plain couscous
3 T raisins (optional)
1/2 t salt
1/4 t ground coriander
1/8 t cinnamon
1/8 t cayenne
2 1/4 cups boiling water
3 T lightly toasted and roughly chopped shelled pistachio nuts
2 T lightly toasted, whole, shelled pistachio nuts
1/4 cup chopped packed mint leaves
1/8 cup chopped green onion
2 T extra-virgin olive oil
1 1/2 t fresh orange juice
In a large bowl, combine the couscous, raisins, salt, coriander, cinnamon and cayenne.
Pour the boiling water over the mixture, cover, and let stand until the water is
absorbed and the couscous is puffed, about 6 minutes.
Uncover and fluff with a fork. Add pistachios, mint, green onion, oil and orange juice. Adjust
seasoning to taste.
Makes 4 servings.
This a great side dish to serve with lamb. I usually leave out the raisins.
